We're Ringing in the New Year with this Butterscotch Cake Recipe!

Happy New Year!

By now I'm sure your collard greens (symbolizing a prosperous new year) and black eyed peas (representing good health) are on the stove top, but if you're still unsure of what to make for dessert then allow me to suggest a delicious butterscotch cake! It's truly one of my favorites... I got the recipe from my sister-in-law and everyone I've made this for says it's amazing! It's simple to whip together too... below is all you need to know!

  • yellow cake mix
  • small vanilla pudding mix (dry)
  • sour cream (8 oz)
  • 4 eggs
  • 1/2 cup of vegetable oil
  • butterscotch chips (1 bag)

Preheat oven to convection bake at 350 degrees. Mix all the ingredients together, but save a small corner of the cake mix and stir this in with your butterscotch chips so they're coated before adding them into your mixing bowl. This will help the chips to evenly distribute in the batter. Then put your mixture into a greased bundt pan and bake for 45 minutes.

Important: we let the cake cool for at least an hour before trying to release it from the bundt pan. It always comes out a mess if we attempt to do this any sooner. It may taste good, but looks a mess so be sure and let it cool before trying to flip it over. :)
