This recipe comes to us from a very dear friend and fellow bunco player, Katie, who brought this as an appetizer to our last bunco gathering. It was such a favorite that it was gone before the serving dish hit the counter top. Yes, it's just that good! Katie not only brings her bunco buddies the best treats, but is the wonderful mother of 2 under the age of 3, a big-time, city planner, a tennis queen, jazzercise junkie, and a really good friend. :)
So Katie, if you're reading this... thank you for sharing your fabulous recipe! And by the way, I know what I'm getting you for your 30th, some leg warmers for all those jazzercise classes. ;)
Here's how to whip up Katie's Bacon:
- Cut 12 slices of good thick cut bacon into 2 inch pieces.
- Katie uses Pine Street Market bacon. This shop is located in Avondale Estates, GA and she swears it's the best.
- Toss the bacon in a bowl with a cup of brown sugar and about a teaspoon of ground pepper.
- Put a wire cookie rack on top of a jelly roll pan and lay the bacon pieces out making sure they don’t overlap.
- This will allow the grease to drip down through the wires into the pan and away from the bacon.
- For those of you who don't know what a jelly roll pan is it's a cookie sheet with 1 inch sides.
- Bake at 325 degrees until bacon is crispy...about 15-18 minutes.
- Let it cool before putting it on a serving plate otherwise all the pieces will stick together.
