Quick and easy - but still HOMEMADE - No Bake Cookies!

Y'all, today I want to share one of my favorite recipes, No-Bake Chocolate Oatmeal Cookies.  It's a favorite because the end result is so yummy, but it sure doesn't hurt that it's quick and easy to boot.  And not to mention - no baking required!!  I got this recipe some years ago from a dear friend and former co-worker, Donna.  Donna is just about one of the sweetest women I've ever had the pleasure of knowing and calling my dear friend, so it's fitting that she's the one who gave me this to-die-for sweets recipe.




Without further adieu:

NO-BAKE CHOCOLATE OATMEAL COOKIES

(yields about 3 dozen)

Ingredients:

2 cups sugar
3 tbsp. cocoa
1/2 cup milk
1 stick butter or margarine
1/2 cup peanut butter (I find creamy peanut butter works best)
3 cups quick oats
1 tsp vanilla

Directions:

1.  Combine sugar, cocoa, milk and margarine in a heavy saucepan.
2.  Heat the above until the mixture boils for 1 minute.  Note: some similar recipes state to let boil for less time (30 to 40 seconds), and claim that the lesser boiling time creates more gooey cookies.  Personally, I've had luck with 1 minute, but just wanted to share that tidbit.
3.  Remove from heat.
4.  Add the peanut butter, oats, and vanilla, and mix well.
5.  Drop by tablespoons onto wax paper and let cool.

Enjoy!  (And try to not eat them all in one sitting).
